For those who have not, it is Malai or Khurchan cooked over hours, that is removed from the sides of a paan, when cooled down. The layer of cooked Malai is then decorated with many beautiful condiments - pistachios, almonds, sugar, kewra water - before rolling into a Gilauri. The process just before making the Gilauri is a beautiful sight. This motif with the finest stitches of most beautiful & complex embroidery, and Jaali stitch, reminds us of the Gilauri, just before getting folded and bound into a mouthful of sweet bliss.
